It’s a long story, but one I hope you would love to read. It took me a good decade to give in to my calling and wrap the dreams into a business plan. The Chef Behind the Counter
Meet Sindhu
I am a food entrepreneur and an author. Born in Nagpur, raised in Kolkata, India, I moved to the US in 2005. Early on in my career, I worked in traditional full-time jobs. But I knew that wasn’t my calling. Something would click to me a couple of years after we moved to the US - something so obvious yet unnoticed that it would drive me to start my culinary enterprise.
The Indian festivities in the US would delight us with amazing delicacies from the native land. Samosas and Chole Kulche, Pani Puri and Aloo Puri – everything you can imagine. But I often missed something native to my tongue – the delicious tanginess of a Kolkata Egg Roll. My childhood revolved around this fulfilling appetizer, and yet it was nowhere to be found on our plates in the US.
During one Durga Puja, I decided it was enough. How can a Kolkatan celebrate this powerful festival without bringing in the dish that was a staple for thousands? That’s when I realized that the Kolkata Style Egg Roll must move to California as well. After a long streak of experimentation in the world of baking and Mediterranean cooking, On A Roll came to life. Since then, I have been delivering joy in the form of Kathi Rolls.
